The monsoon climate, laterite soil, and cool mountain breezes create peppercorns with higher piperine content (the compound that makes pepper spicy and flavorful). Our peppercorns are hand-picked when 100% ripe (not early, like industrial operations), then sun-dried for 7-10 days until the outer skin wrinkles and darkens.
